Paneer Makhani (v)

This vegetarian curry is a perfect treat after a long day on the hills – with loads of Indian inspired flavours. Great for couples or groups -  this recipe will leave everyone satisfied.

Serves 4

Ingredients

  • 1tsp chilli powder
  • ½ tsp fenugreek
  • 1 tsp garam masala
  • ½ tsp cinnamon
  • 1 bay leaf
  • 1/4 tsp turmeric
  • 4 cardamon pods
  • 200g paneer
  • 50g butter
  • 1 tbsp cashew butter
  • 3-4 garlic cloves
  • Thumb of ginger
  • 1 tbsp tomato puree
  • 400g chopped tomatoes
  • 60ml double cream/50g natural yoghurt
  • 300g basmati rice (washed)
  • 1 vegetable stock cube
  • 450ml water
  • 15g fresh coriander
  • 1 red chilli

Directions

  1. Boil your water using in your kettle and add to a pan with your vegetable stock cube and rice.
  2. Stir and simmer for 5-8 minutes (or until most the water is absorbed) and then take off the heat and leave with a lid on to steam as you make the curry.
  3. Chop the paneer into cubes and add to a hot pan with some oil and cook on a medium heat.
  4. Carefully turn the paneer every 30 secs to a minute until nice and browned on all sides. Remove from the pan. Lower the heat on the stove.
  5. Finely dice your garlic and ginger and add to the pan with the butter. Cook until softened being careful not to burn.
  6. Add tomato puree and cashew butter and cook for a few minutes.
  7. Add all the spices and cardamon pods to the pan, stir and cook for a few minutes then add the chopped tomatoes.
  8. Bring to a simmer and then stir through your yoghurt/cream and return the paneer to the pan.
  9. Serve with rice, fresh coriander and slices of red chilli.
