French Toast (v)

The perfect breakfast before a day enjoying a long walk in the countryside.

This delicious French Toast recipe is a quick and easy to prepare and guaranteed to put a smile on your face at camp or out on the hills.

Serves 2-3

Ingredients

• 6 thick slices brioche loaf
• 2 eggs
• 100ml milk
• 50ml double cream
• ½ tsp cinnamon
• ½ tsp nutmeg
• ½ tsp vanilla extract
• 50g butter
• Strawberries
• Sugar

Equipment

Method

1. Crack your eggs into a bowl and add the milk, double cream, nutmeg and vanilla extract. Whisk them to combine and leave to one side. Tip – you can do this at home and avoid the risk of breaking your eggs in your pack!
2. Add your cinnamon and sugar together, mix and leave to one side.
3. Place your frying pan on the stove on a medium heat.
4. Melt a knob of butter in the pan.
5. Dip a slice of brioche into the egg mix on both sides and then place in the pan to fry.
6. Cook for 2-3 minutes before flipping and revealing a golden, seared surface. Cook for the same time on the other side.
7. Remove from the pan and scatter with cinnamon sugar.
8. Repeat the process with the other brioche slices. Serve 2-3 slices per person with some fresh strawberries or any other berries and fruit of your choice.
